Sure, pancakes make for a delicious Saturday morning breakfast, but they aren’t the healthiest. But these Wheat-Free Banana Apple Cinnamon Walnut Pancakes? They’re pretty darn healthy.
I love pancakes as much as the next person, but let’s be honest, after eating them you want to crawl up into a carb-induced fetal position and watch whatever the latest Netflix TV series release is. I remember reading somewhere (and I can’t remember where!) that all you needed to make delicious and healthy pancakes were two ingredients – eggs and a banana. So, I decided to take a stab at it, but dress them up a bit.
- 2 eggs
- 1 banana, mashed
- 1 diced apple, peeled
- 1 tsp cinnamon
- 1/8 cup walnuts
- Maple syrup
Heat pan to medium heat. Spray with non-stick cooking spray. Let heat for a minute. While waiting, mash banana in small bowl. Mix in eggs, diced apple, cinnamon and walnuts.
When heated, pour mixture into pan, 1/3 cups at a time. Cook over medium heat for approximately 30 seconds to two minutes, depending on how cooked you like your pancakes. Flip and repeat for other side.
Note: These pancakes are really delicate and break easily, so don’t expect perfection on the first try! They are really tasty though – and extremely filling! The egg is very prominent in flavor, so I would highly recommend that if you are making a different version of these, to add a lot of fruit or other nuts if you would prefer a sweeter taste!
- Serve and top with maple syrup, a sprinkle of cinnamon and/or more walnuts. Enjoy!
