Nothing like a good chocolate chip banana bread on a warm and cozy Sunday afternoon!
There’s something about banana bread that reminds me of my childhood. I’m not quite sure why though, I don’t think my mom made it all that often, maybe a friend’s mom did? Regardless – I LOVE banana bread! Especially chocolate chip banana bread – chocolate and bananas is one of my favourite flavour combinations – second to chocolate and peanut butter of course.
Every time we have ripened bananas in the house I put them in the freezer and tell myself I am going to make banana bread, but it never happens. I was in a baking mood a while back and whipped up a loaf of chocolate chip banana bread with my ripened bananas before they went in the freezer (I think that’s the trick!) I had a slice and brought the rest to work for my coworkers to munch on. Needless to say, I went home with an empty tupperware container, so I think it was a hit!
- 1 cup sugar
- 2 eggs
- 2 cups flour
- 1 tsp salt
- 1/2 cup shortening
- 1 tsp baking soda
- 2-3 ripe bananas, mashed
- 1/2 cup milk chocolate chips
Preheat oven to 350°C.
In one bowl mix shortening, sugar, eggs and mashed bananas. In another bowl, mix flour, salt, baking soda. Slowly blend flour mixture into egg mixture until a thick paste forms. Add in chocolate chips and mix well.
Pour mixture into greased loaf pan and bake for 45-55 minutes, depending on oven. Use toothpicks to see if bread is ready after 45 minutes.
Let cool for 20 minutes and enjoy!
