This is, hands down, one of my favourite Weight Watchers recipes. Not only is it delicious, it’s low in Points Plus values and it’s really filling – the best of both worlds! It’s also the perfect alternative to those unhealthy, oily pestos out there.

Ingredients:

  • 1 bushel fresh asparagus
  • 1 package gnocchi
  • 1/4 cup grated romano cheese
  • 1/2 tsp pepper
  • 2 tbsp pine nuts
  • 1 tsp olive oil
  • 1 clove garlic
  • 1 cup fresh basil
  • 1 cup fresh spinach

Directions:
Boil two large pots of water. While water is boiling, trim ends off asparagus. When water is boiled, add asparagus to one pot and cook until tender, approximately 3-4 minutes. Ensure you save 1/4 cup of the water used to cook the asparagus.

Add package of gnocchi to other pot of boiling water and cook until gnocchi floats to surface, approximately 3-4 minutes. In the meantime, add olive oil, garlic (chopped), pine nuts, basil, cheese, spinach and pepper to blender.

When asparagus is done, use a slotted spoon to remove it and place it into a bowl and cover. Take 1/2 cup of the asparagus and add to blender. Add 1/4 cup of the reserved cooking liquid to the blender. Blend until creamy.

Add pesto to cooked gnocchi and mix well. Add asparagus to individual servings and sprinkle with romano cheese and black pepper, to taste.
