This week I’ve put together the perfect Valentine’s Day meal of Chicken Cordon Bleu and Parmesan & Herb Roasted Potatoes for you! Now, for dessert – Apple Walnut Coffee Cake!
I love coffee cake – it’s one of my favourite desserts. But add apple and walnut to the mix and it’s all over. To cap off your perfect Valentine’s Day meal – try this recipe for a moist and delicious Apple Walnut Coffee Cake.
For the topping:
- 1 cup brown sugar
- 1/2 cup flour
- 1/2 cup butter, room temperature
- 2 tsps cinnamon
For the cake:
- 1 1/2 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 3/4 cup sugar
- 1 egg, beaten
- 1/3 cup melted butter
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 2 chopped apples
- 1/4 cup chopped walnuts
Preheat oven to 375°.
In small bowl, combine all of the topping ingredients. Use a fork to blend until crumbly. Set aside.
In another bowl, sift flour and baking powder. Beat in egg, sugar and melted butter. Add milk and vanilla and mix well. Add apple and walnuts and mix thoroughly. I find using my hands easiest to make sure everything is blended well.
Pour batter into a greased 8-inch or 9-inch layer pan. Sprinkle topping crumb mixture evenly over batter. Bake for 25 minutes, or until cake is cooked to your desire – but do not overcook! Let cool for 15 minutes before cutting into squares. Pair with a side of french vanilla ice cream for an extra treat! Now go and enjoy that delicious Valentine’s Day meal!
